Ultra Green Sorghum & Turmeric Recipe

with KIKI HEALTH Organic Turmeric Powder

You might already know about turmeric’s incredible anti-inflammatory effects, as well as benefits for aches and pains and boosting skin, muscle and joint health, plus support for detoxification and weight loss. This delicious powder has a strong taste (described as “earthy with notes of lemon”), which makes it a little overwhelming for smoothies, but perfect for a savoury green sorghum salad.

We’ve used Kiki Health Organic Turmeric, which is grown in Northern India on the remote countryside, as the health benefits you’ll get from the Curcuma root (the plant it’s made from) depend on the quality and purity of the powder.

Main Ingredients:

  • 1 cup sorghum
  • 3 cups of water
  • 2 zucchini, sliced lengthwise
  • 1 head of broccoli, cut into florets
  • Avocado oil
  • 1/2 cup cashew nuts, roasted
  • 1/2 cup shelled edamame beans, blanched in boiling water
  • 3 leaves of kale, leaves removed, finely cut
  • 1 spring onion, finely chopped
  • A big handful of fresh herbs (we used mixed coriander, mint, basil)
  • 3 tbsp extra virgin olive oil
  • Juice and zest of 1 lemon
  • 1 1/2 tsp ground cumin
  • 2 tsp Kiki Health Organic Turmeric Powder
  • Pinch of chilli flakes
  • 2 garlic cloves, crushed
  • Sea salt and black pepper
  • 1 cup sorghum

Instructions

Preheat oven to 200˚C, fan bake. Place the sorghum and water into a saucepan and bring to the boil. Reduce to a simmer for approximately 60mins. Set aside to cool and for any remaining water to be absorbed. Place the broccoli florets and sliced zucchini on a baking tray. Drizzle with oil and salt then place in the oven to cook. Cook for ~10mins, then for the last 5mins change the oven function to grill. You want the vegetables to be crispy and golden. Once the sorghum and the vegetables are cooked. Add to a big bowl along with all of the remaining ingredients. Season generously with sea salt and cracked black pepper.
