This charcoal pancake recipe uses the Kiki Health Activated Charcoal Powder, which is made from highly purified coconut shells. The use of activated charcoal dates back to 2000 years ago when it was used to purify water and treat poisoning (and is still used in some hospitals for this today!). Completely tasteless, this fine powder is used to absorb toxins and gases in the body’s digestive system.

This delicious meal makes for the perfect “hangover” breakfast or is great if you’ve had a stomach bug or bloating. Not only will the activated charcoal help with eliminating toxins, but these pancakes also are full of fibre and taste incredible!

Main Ingredients:

  • 1 cup buckwheat groats
  • 1/2 cup desiccated coconut
  • 2 ripe bananas
  • 1 tablespoon coconut sugar
  • 1 teaspoon vanilla bean paste or extract
  • 1 teaspoon baking soda
  • 1 teaspoon Kiki Health Activated Charcoal Powder
  • 1/2 cup milk (oat/almond/dairy)
  • Pinch of salt

Topping Ideas:

  • Coconut yoghurt
  • Hemp seeds
  • Nut butter
  • Sliced banana
  • Granola
  • Nut Butter

Add buckwheat and coconut to a blender and blend until you have a fine flour. Add the remaining ingredients and blend until you have a smooth mixture. Heat a non-stick pan over medium heat. Melt 1/2 tsp of coconut oil in the hot pan. Spoon desired amount of mixture for each pancake into the pan. Cook each charcoal pancake for approx. 2mins on each side. Serve with your desired toppings.

Best eaten fresh but any leftover charcoal pancakes can be stored in the fridge for up to 10 days.
